FLANSY'S EASY RED ONION RELISH

for the summertime!

These pickeled onions are mild, delicious, very versatile, and provide you the bragging rights of making something homemade with very little effort! It can go on scrambled eggs, in a sandwich, on a bagel with lox, or as a side dish with barbecue. The recipe is super-flexible. You can't really make it wrong, even if onions and vinegar are the only ingredients available. It's good once cold, gets better in a day, but it only lasts a week so small batches are where it's at.

You’ll need a medium-sized jar with a lid and half a large red onion or one small one to fill it. (It does shrink up!)

Put into your small pan:

1 cup of vinegar (red wine, white, or cider — all work differently but all are good)

1/3 cup white or brown sugar

Add vinegar to pot and heat to a simmer. (Open the windows as some people find the smell dizzying.)

Toss in:

A bay leaf

1/2 teaspoon of fresh pepper

1/2 teaspoon of salt

1/2 teaspoon of paprika (if you've got!)

And if you have a fresh yellow or orange pepper, slice a quarter of it and chop into 1/4 inch cubes for extra color

Turn the heat off the pot. Slice onion and toss in the pot. Stir the onions around. Put a lid on the pot and let it sit for an hour.

Move it to your jar and refrigerate –– and prepare for flavor!
